It was during a rainy winter afternoon in 2005 that Jonathan Spillane decided he would no longer be a carpenter. After more than 22 years of hammering nails and sawing wood, Spillane opened Cocoapelli Chocolates ®. Spillane studied with Ecole Chocolates before opening Cocoapelli Chocolates ® in September 2006. He focuses on the highest quality milk, white, dark and caramel chocolates that are formed into edible art.
